A Tale Of Two Menus
It was the Best of Pizza, It was the Best Of Daiquiris, it was a journey of Wisdom, it was a Journey of Foolishness. In order to bring you the worlds best pizza we embarked on a journey of wisdom. In 2008 we took over a historic Pizza Shop established in 1967 from its original owner Francisco an Italian immigrant from the Calabria region in southern Italy. Calabria is known for its rich agriculture of olive oil, tomatoes, herbs, and cheeses. Since our family migrated from Calabria in the early 1900’s we were familiar with the cooking style of fresh hearty ingredients through pasta, sauces, and breads. Francisco’s century old recipes and skills past down through generations created a pizza experience like no other. we worked side by side with Francisco for months formulating recipes, learning techniques, and sharing stories from the old country. Sauced is a combination of Francisco’s old world recipes, Calabrian inspired fresh ingredients, and original combinations that will make your mouth water.
Bringing you the worlds best daiquiris is another story all together. Being from Ohio we’re snow birds and traveled south as often as we can. In all our favorite destinations we found ourselves always going to a local daiquiri shop for a frozen treat. We wished there was one closer to home but we understood our summers are short and our laws were restrictive. Now we can’t make our summers longer, but one thing good about covid was the Ohio law allowing for to go daiquiri sales, and with new DORA(Downtown Outdoor Refreshment Areas) popping up we thought its DAIQUIRI TIME! Turns out making the worlds best daiquiris is much harder then it sounds. Of all the different shops we’ve visited all had good and bad flavors we liked the banana from one and the strawberry from another some flavors tasted fresh but most tasted artificial. After trying dozens of premixes we were left with mixed results there were a few we liked but most were artificial over sweetened flavors geared more towards children. Then I had an idea what if we took the same approach with our daiquiris as we did our pizzas. Then we started out with fresh ingredients and a little science. We started out with fresh fruit some like bananas were easy others like blackberries left it a little to seedy, then we added science like Brix levels and the different types of gums and no not the chewing kind. Finally after countless failures, hundreds of kitchen messes, and one very understanding wife Voila! The 12 original flavors were born. We’re not done yet, as we are always experimenting with our seasonal flavors.
